Course Overview

This course is designed for those who are keen to pursue a career in hospitality and catering establishments. This programme will develop the knowledge that you will have gained on a Level 1 course and it will teach you a variety of catering craft skills to a high standard. It will provide you with the latest skills and approach to hospitality industry practices, food safety, and health and safety. It will also give you a good foundation in a wide range of cooking skills to apply across a variety of catering contexts. All of this is essential grounding for those keen to progress in catering and to develop high standards.

Practical work features strongly in this course. You will learn how to prepare, cook, and present a range of food items which will include meat, fish and poultry, vegetables, soups and sauces, and desserts.

Good English and maths skills are essential for success in studying and for future employment prospects and so Croydon College ensures that these skills are developed in all learning opportunities.

It’s also important to have good English and maths qualifications and so all students will study English and maths and work towards an appropriate level and type of qualification including GCSE. This will be part of all 16-18 year old students’ Study Programme alongside their main vocational or academic qualification and will be discussed with students at interview.

This programme is delivered by fully qualified and professional staff. You will benefit from a professional working environment which includes state of the art kitchens and the latest technology in cooking equipment.

Our restaurant, Chefs, is open to the public, providing real life work experience. Here you will prepare and serve lunch and dinner to paying guests and also cater for special events. We also provide civic hospitality for the Mayor of Croydon.

Trips and Activities:

You will have the opportunity to participate in trips organised to top quality restaurants and hotels; the objective being for you to experience first-hand the working environment and the benefits of employment within this sector.

Our students also have the chance to enter many exciting culinary competitions, including the Nestlé Professional Toque d’Or, Young Seafood Chef of the Year, Wessex Salon Culinaire, and the British Turkey Student Chef Awards!

Career Opportunities & Further Study

Completion of this course can lead to progression to our Level 3 cookery programme.

Alternatively, you can seek employment as an apprentice within the industry or this qualification can lead to First Commis Chef positions with appropriate experience.

Former students have gone on to work in top hotels and restaurants.

The course is continuously assessed and is carried out using different methods to show the full range of your skills and knowledge. Assessment can be divided into practical tests of competence and written theory tests.
